Switch from "letterboxed" to "stretched" in help tab and try again. With "letterboxed" it preserves the aspect ratio, giving what you are seeing. With "stretched" it will fill all display space - all three monitors. Naturally things look mighty "fat" as aspect ratio is no longer correct, but at least it does support EyeFinity in this way.
