If you mean by 'increasing the pixels' increasing the resolution, then yes this is a pretty simple and straightforward thing to do.
My favorite quick and easy image handling software is IfranView. It is freeware and very quick/fast and has the stuff I need to do quick and dirty image manipulation.
IfranView has a resolution manipulation function, so if I take a 1 megapixel picture with my camera, I can reduce it to 640x480 or increase it to whatever I like.
The only downside of this is that it doesn't increase the quality, so there isn't much point in increasing the resolution. I usually just decrease the resolution for posting images to websites to make it easy on my fellow 56kers.
Dunno what the ifranview website is, try searching on google.com.
Hope this helps a little
